Description
Soil : Clay, pebble terraces. Vinification : Manual harvest in boxes of each plot separately. Destemming above the vats. Fermentation without sulfites and maceration of four weeks. Frequent watering of the whole cap. Maturation: Carignan and Grenache 30 months in concrete and enamelled vats. Syrah: 15 months in enamelled vats and 15 months in two and three wine barrels. The long maturation has left behind the primary aromas, the wine has now begun to reveal its true personality supported by deep touches of black fruits, woody essence, and forest.
