Description
Schist soils with an acidic tendency. Manual harvesting. Traditional vinification under temperature control with a search for finesse and elegance. This cuvée is enriched with a part aged 12 months in oak barrels and 12 months in vats.
A complex nose evolving on ripe fruits, smoke, supported by a beautiful freshness. Notes of almonds and roasted hazelnuts, with flavours of very ripe Morello cherries, and a fresh, slightly peppery finish.
To be enjoyed with a roasted rabbit with herbs from the garrigue, or a fine rib of beef.
