Canopée 2021

Canopée is the living expression of agro-pastorally managed vines. The living soil and photosynthetic energy allow us to add nothing, to not intervene during the vinification. The old Cinsaults and Grenaches noirs, Mediterranean in essence, were hand-harvested and naturally macerated at low temperature to produce this vibrant juice. With no trace of sulphur, Canopée is even more drinkable. Proof that fragility and pleasure are intimately linked.
