Description
Mémoire is one of the 3 signature wines. The Mauzac is highlighted in it. It differentiates by the selection process (plots, juice, barrels), and the vinification and aging process in oak barrels. After an aging of 30 months on the lees, she reveals an uncommon picture of the Mauzac with an iodine characteristic, almost marine, a lovely acidity, and a complexity coming from the fruit and the oak contact. The name of the wine is a reference to the Delmas' grandparents that vinificated in barrels.
