Description
Manually harvested with severe sorting out in the vineyard and on reception in our cellars. Fermentation and maturing for 40% in French barrels (15% new oak) with weekly batonnage during 9 months.
Manual harvest with rigorous sorting of the grapes in the vineyard to ensure the optimum quality of the harvest. The long, low-pressure pressing allows for a selection of the best juices. After a static cold settling, the must is sent to oak barrels (55% volume, of which 15% are new) and 45% to vats to start their fermentation. Aging continues in the containers on fine lees for 9 months.
