YIELD & SOIL - 35 hl / ha - Chalky clay soil & river pebbles VINIFICATION : In oak barrels. Grapes are carefully selected, destemmed, put in barrels of 400L then lightly crushed. Manual punching down in barrels for 20 days, maceration for 30 days. Finally, we proceed to a slow manual pressing using a small wooden press.. This exceptional vintage praises slowness. EYE - Intense purple color NOSE - Very spicy with scents of redcurrant, slightly jammy. A touch of curry and pepper on a final note of liquorice and violet. MOUTH - An elixir of spicy scents with a lot of freshness
