Harvested by hand, the grapes are then meticulously sorted. The whole bunch pressing is long and delicate, and favours the draining of the best juice. The must is sent into oak barrels (30% new) to begin their fermentation. The wine is aged on the lees for 9 months. A confidential cuvée of great complexity, this deep, mineral and powerful Châteauneuf-du-Pape embodies the richness of its terroir. This racy white wine, with floral notes, is characterised by its balance between tension and volume. Its oaky side supports the structure of the wine and gives it an elegant finish with great length.
